COOL HOT FOOD STORY

While our natural fruit smoothie & fruit cup operation flourished the
transformation of the food concessions business was not occurring
fast enough. There was a definite need for healthy alternative food items
at the shows across America.

Again we were the first to develop new & exciting and fresh cool hot food
items and environments.

These niche foods were named Jaffa after the ancient Arab-Israeli city
outside the modern city of Tel Aviv. We brought these foods to the Big Apple
at Ben & Jerry's music festivals, to the green mountains of Vermont where
the Grateful Dead played to 100,000 persons into the night and to an airforce
base where one band named Phish and 150,000 partied into the night.

People know good food and that is the reason for our success!!

JAFFA FALAFEL:

Fresh falafel is definitely an issue of importance in upscale food operations.
Please allow for me to explain about falafel facts and fiction. Falafel has gotten a bad rap because many people that try it are disappointed in its quality and overall taste. On the other hand if you have ever tasted the true falafel you really fall in love with this light vegetarian sandwich.

Our falafel is called Jaffa-style and is made as follows:

Firstly, we take fresh chickpeas and soak them overnight in pure water. The next day
it is then grinded up with fresh parsley and cilantro as well as our middle-eastern herbs and spices. It is then fried in a no-cholesterol canola oil and served on top of fresh greens from our salad bar. Our pita breads are baked fresh. The sandwich is then covered with Israeli
salad which consists of small cubed cucumber and tomatoes moistened with lemon,
garlic and olive oil and then topped with our rich and flavorful tahini sauce. Sprouts are
optional. An inferno sauce of freshly ground jalapenos is the finishing touch.........Ouch!!!!!!!!!

JAFFA-CHICKEN:

We take a boneless-skinless marinated in middle-eastern herbs and spices and of course white wine fresh chicken breast then char-grill it. From there we slice it into bite-size pieces. It is then placed on a bed of fresh greens in the same fashion as the falafel with the Israeli salad, sprouts and tahini sauce. We also have an optional sauce for the Jaffa chicken consisting of a low-fat yogurt cucumber and dill. I almost forgot about the smoothest and freshest hummus ever made that goes inside both types of sandwiches. Our famous inferno sauce still applies to top things off.

REMEMBER: Our recipes come from the ancient Arab city of Jaffa in Israel. No one can beat our product because they do not possess the knowledge nor the desire to produce such original and creative award winning pita sandwiches.
